During the first week in Vietnam, the group had lunch at a restaurant called “Fish Sauce.” This restaurant serves food in a family-styled manner meaning that a variety of entrees are brought out for the entire table to share. All the food that was brought out was delicious.
First weekend out in Vietnam!! We celebrated a very special 21st birthday, so our Vietnamese roommates took us out to explore the night culture in Ho Chi Minh City.
For my internship, I am researching at the Oxford University Clinical Research Unit. This unit is affiliated with the Hospital of Tropical Diseases pictured here. During the early mornings, this area is packed with patients.
There is plenty of fruit for you to buy at the different local markets. My favorite fruit that I have tried are the mangosteens, (the small circular, purple fruit).
Meet Hùng and Andre! Hùng has been one of our local tour guides here in Vietnam. He has been showing us different shops and restaurants to go to! He has made our stay in Vietnam a very welcoming one.
Fun Fact: Green Juices make me feel like I am being healthy. Pennywort drinks (Nước Rau Má) are one of my favorite drinks in Vietnam. The drink is so refreshing, and you can add different flavors to it such as coconut or mung bean.
We met other Vietnamese travelers in Ho Chi Minh city and spent some time on Walking Street (Đường Nguyen Hue) trying the food carts and bubble tea cafes. If you ever get the chance to, try bubble tea infused with cream cheese in Vietnam.
Our class took a field trip to the Department of Planning and Architecture. We spoke to the Director about their plans to increase development in Ho Chi Minh City.
A lot of the homes here are located in alleyways and built vertically to allow for more space for other homes to be built. Many Vietnamese use their home as their place of work as well.

Cover photo caption: There are hundreds of coffee shops to try, and the coffee here is amazing. One of the local Vietnamese roommates recommended this café called “Là Việt,” which has three levels of sitting area to enjoy conversations and coffee.
