This is pineapple fried rice served in a pineapple. This meal is from one of our favorite restaurants in the city named Hum. Hum is a vegetarian restaurant that serves a lot of healthy and tasty dishes right in the heart of the city.

This is a view from my internship at DRD (Disability Research and Capacity Development). My internship is located in District two of HCMC, which is about 20 minutes from our guest house. It is interesting to the new development in District two since the district has only started to develop.

- A field trip to the Museum of Traditional Vietnamese Medicine for our Vietnamese class. In this photo we are touching a sacred fertility pole that was used and is still used today to promote fertility for woman and men in Vietnam. It was interesting to learn about all the different types of herbal medicine that has been used throughout the history of Vietnam.

My fellow CET friends and I went to Phu Quoc Island for a weekend get away adventure. This picture in particular is taken at Sao Beach, which is located on the East side of Phu Quoc Island. The island is a perfect getaway for a calm and relaxing weekend away from the fast-paced city life that engulfs HCMC.
